Chapter six of Good Good's Kitchen & Traditions lunches: a communal feast off the fire. A hibiscus and baobab spritz to start, then whole-roasted pig with a fermented masawu glaze, baobab-brined chicken, whole-roasted goat, and whole-roasted mhumbu. Sides of steamed cowpea bread, mufushwa chilli crisp, mupunga pilau, fire-roasted sweet potatoes, crunchy nyimo beans, grilled okra and peach salad, and tsunga chimichurri, with matamba to finish.
